Honey Mustard Chicken

Ingredients:

  • 1 pound chicken breast or chicken thighs
  • 3 tablespoons honey
  • 3 tablespoons dijon mustard (opt for grainy dijon mustard for added texture!)
  • 2 tablespoons olive oil
  • 1 garlic clove, finely minced or grated
  • Optional: ¼ teaspoon cayenne pepper for a hint of heat
  • Freshly ground salt and black pepper

Instructions:

  1. In a spacious bowl, combine honey, dijon mustard, olive oil, garlic, cayenne pepper, salt, and pepper. Mix well until the marinade is uniform.
  2. Add chicken to the bowl and thoroughly coat it in the marinade. Cover the bowl and refrigerate for 30 minutes to an hour.
  3. Choose your preferred cooking method: grilling or baking.

To Grill Chicken: Preheat the grill to 400°F. Place the chicken on the grill and close the lid. Grill for 6-8 minutes on one side, then flip using tongs and grill for an additional 6-8 minutes. Ensure the internal temperature reaches 165°F before removing from the grill. Rest covered with foil for 5-10 minutes before serving.

To Bake Honey Mustard Chicken: Preheat the oven to 400°F. Place chicken on a baking sheet lined with parchment paper. Bake for 20-30 minutes until chicken is cooked through and internal temperature reaches 165°F.

Notes:

  • For freezing, pour the marinade into a resealable freezer bag, add chicken, and freeze for up to 3 months.
