Honey Mustard Chicken
Ingredients:
- 1 pound chicken breast or chicken thighs
- 3 tablespoons honey
- 3 tablespoons dijon mustard (opt for grainy dijon mustard for added texture!)
- 2 tablespoons olive oil
- 1 garlic clove, finely minced or grated
- Optional: ¼ teaspoon cayenne pepper for a hint of heat
- Freshly ground salt and black pepper
Instructions:
- In a spacious bowl, combine honey, dijon mustard, olive oil, garlic, cayenne pepper, salt, and pepper. Mix well until the marinade is uniform.
- Add chicken to the bowl and thoroughly coat it in the marinade. Cover the bowl and refrigerate for 30 minutes to an hour.
- Choose your preferred cooking method: grilling or baking.
To Grill Chicken: Preheat the grill to 400°F. Place the chicken on the grill and close the lid. Grill for 6-8 minutes on one side, then flip using tongs and grill for an additional 6-8 minutes. Ensure the internal temperature reaches 165°F before removing from the grill. Rest covered with foil for 5-10 minutes before serving.
To Bake Honey Mustard Chicken: Preheat the oven to 400°F. Place chicken on a baking sheet lined with parchment paper. Bake for 20-30 minutes until chicken is cooked through and internal temperature reaches 165°F.
Notes:
- For freezing, pour the marinade into a resealable freezer bag, add chicken, and freeze for up to 3 months.
