Ingredients:

- 1 3/4 cups gluten-free oats  
- 1 1/2 cups low-fat cottage cheese  
- 1 tbsp plus 1 tsp vanilla extract  
- 1 cup egg whites  
- 1 tsp pumpkin pie spice  
- 2 1/2 tsp baking powder  
- 1/2 cup pumpkin puree  
- 1 large ripe banana, mashed  
- 3/4 tsp cinnamon  
- 2-3 tsp maple syrup (adjust for sweetness)  
- 2 tsp ground flaxseed  
- Pinch of salt  
- Nonstick spray, butter, or vegetable oil for greasing  
- Toppings of choice: jam, fruit sauce, syrup, nuts  

Instructions:

1. Combine all ingredients in a blender and blend until smooth.
2. Heat a large nonstick skillet over medium heat and lightly grease. Scoop about 1/4 cup of batter onto the skillet using an ice cream scoop or measuring cup. 
3. Cook until the edges bubble, then flip and cook the other side until golden brown and cooked through.
4. Keep pancakes warm in a 200°F oven while finishing the rest of the batch. Serve with your favorite toppings or freeze for later use by separating pancakes with wax paper.
